Developing an Allergen Control Program

1. Form a cross functional team
2. Map the process to identify risks for cross contamination
3. Conduct a risk assessment
4. Develop procedures or processes to prevent cross contamination
5. Validate the cleaning procedures with allergen testing kits
6. Assess ingredients to determine the level of risks for cross contamination further upstream (suppliers). Are suppliers running other allergens on line producing your ingredients?
7. Provide allergen training for employees on an ongoing basis
8. Audit the Allergen Control Program
9. Continuously improve the ACP
